Head Bartender - The Lounge

Kerzner International is hiring a Head Bartender to join the Food & Beverage team at One&Only The Palm Resort in Dubai. The role involves leading the bar team, ensuring seamless bar operations, and delivering exceptional guest experiences.

Key Duties and Responsibilities

• Complete stock orders at the end of each evening shift.
• Ensure all drinks adhere to resort recipes and standards.
• Serve beverages to guests with accuracy and speed, maintaining One&Only standards.
• Mix all types of drinks and cocktails based on standardized recipes.
• Properly store and safeguard all bar stock.
• Maintain cleanliness and upkeep of bar areas, chillers, floors, storage, and equipment.
• Perform tasks assigned by the Manager that contribute to guest satisfaction and profitability.
• Prepare Daily Bar Inventory and Inter‑Transfer Report.
• Generate Breakage/Spoilage/Spillage Report, Full Bottle Sales Report, and daily operating equipment inventory.
• Requisition Beverage Supplies, Operating Supplies, and Food Supplies for the Bar.
• Maintain par stock levels and arrange requisitioned items by appropriate storage conditions.
• Ensure adequate supplies of napkins, straws, cocktail picks, ice, linen, rags, bar mats, and glassware.
• Receive payments, handle cashiering tasks in outlets with self‑cashiering, and account for sales.
• Validate guest orders, compute totals, and prepare Cashier’s reports, ensuring cash box tallying.
• Turn over daily sales and reports to the Head Cashier.
• Stock glassware and maintain inventory of operating equipment.
• Conduct monthly inventory of bar equipment and check temperatures of chillers.
• Mix alcoholic and non‑alcoholic drinks per standardized recipes.
• Set up the bar according to standard countertop setup before service hours.
• Prepare all mise‑en‑place before service hours.
• Produce sugar syrup and fruit juices required for cocktails.
• Serve wine according to standards and store it with proper temperature control.
• Follow the sequence of service as other service attendants.
• Engage in suggestive selling to boost wine and spirit sales.
• Communicate with guests to promote products and services.
• Establish and maintain good relations with colleagues across departments.

Qualifications

A suitable candidate should have 1–2 years of experience in a 5‑star hotel, resort, or upscale bar environment, strong knowledge of beverage service standards, mixology basics, and bar operations. The candidate must demonstrate excellent personal presentation, strong interpersonal skills, and the ability to build positive rapport with a diverse, high‑profile clientele. Excellent English communication skills are required, with proficiency in an additional language considered an advantage.
